Eggy Toast

Eggy toast - a cute breakfast idea for kids, sure to give you a a big smile from your little human!

I made this breakfast countless times growing up. It’s so simple it barely needs a recipe!

To prepare, simply take your favourite cookie cutter and dive it into the middle of a soft slice of bread to punch out a shape. Lightly drizzle oil or butter into a frypan, heat, place in a slice of bread, crack an egg into the middle of the holey bread, and leave until the egg has cooked, maybe flipping once. Make sure to not throw away the inner cookie cutter bit of bread – it’s the perfect vehicle for a smear of avocado, marmite or nut butter.

Quite the Balanced Breakfast

  • Eggs are a source of protein, important for growth and development of little ones. They’re a complete protein, which means they contain all essential amino acids necessary for health – essential meaning our body cannot produce them, so we must get them through diet.

  • Whole food fat from the olive oil or butter, the smear of avo or nut butter on the toast or the inner egg yolk. They’ll provide energy, aid taste, and assist in the digestion of fat soluble vitamins i.e. vitamin A, D, K and E.

  • Toast the ultimate kid-friendly fare! Toast supplies energy to help them tackle busy mornings in the classroom. Aim to select a quality grainy bread that’s a good source of dietary fibre, ideally with a minimum of 2.5g/slice – fibre helps to keep us regular, and will slow the release of energy from the food we eat, which means we’re kept full for longer.

Eggy Toast

Prep Time: 5 minutes
Cook Time: 5 minutes

Ingredients:  

  • 2 slices grainy bread, your pick
  • 2 eggs
  • A small drizzle olive oil or cube of butter
  • Spread of choice e.g. avocado, marmite, nut butter, butter…

Method:

  • Pick out a favourite cookie cutter that’ll comfortably fit in the middle of a slice of toast. You want it to be not too big, not too small – enough to fit a cracked egg!
  • Punch out the middle of the bread. Keep inner piece to side.
  • Heat oil or butter in a pan over a low-medium heat.
  • Once the pan has heated, place slices of bread in pan and carefully crack an egg in the middle of each hole.
  • Leave to cook until egg is set! Flip once, if desired. Keep an eye the pan doesn’t get too hot and burn – turn down heat to a low if needed.
  • Once cooked remove egg from pan and place on a plate. Smear cut toast with your choice of spread e.g. avocado as done here.

Notes:

Gluten-free? Use a gluten-free bread.
Nut-free? Don’t use nut butter as a spread option on toast.
Dairy-free? Don’t use butter when frying or as a spread option on toast.
