Mint and grated cucumber raita🥒✨

I adore Indian cuisine, including its yoghurt side dish raita - the perfect cooling accompaniment to a spicy curry!

This raita is refreshingly creamy, and textured yet light. It features grated cucumber (with a nifty technique to squeeze out excess water), fresh mint to dial up the cooling effect, and a hum of earthy cumin. When made with ‘live’ probiotic yoghurt, it can provide a boost to your good gut bugs too!

Avocado chocolate mousse🥑🍫 Feels kind of retro now (so 2015💁‍♀️), but still darn delicious.

Blend five ingredients in a food processor and you’re left with a yummy plant-based and dairy-free chocolate mousse.

This recipe uses a nifty technique where it chills coconut milk, helping give the mousse a super thick and creamy consistency (at lower temperature, the saturated fat firms and voilà👌!).

Cold-smoked salmon pesto-cream cheese pinwheels✨. These are the most delicious appetiser (or lunch!). They’re fun to prepare and full of flavour.

They’re as easy-to-make as spreading a wrap with a two-ingredient pesto cream cheese spread, layering over slices of @regalsalmonnz cold-smoked salmon and rolling tightly. From there, leave in the fridge to firm and slice.

@regalsalmonnz salmon has a well-deserved reputation for its exceptional flavour, vibrant color and buttery texture. Nutritionally, it’s a great source of quality protein and important minerals, and also offers a rich source of omega-3 fatty acid.
