Hummus on rice cakes is a solid snack idea, and one that’s been in my rotation for years. And, if it ain’t broke, don’t fix it, right? Well, I’d like to counter myself.
As a Registered Nutritionist, I’m always looking for ways to boost the nutrition (and flavour) of what we eat. So, consider these hummus dukkah rice cakes an evolution of the classic. A sprinkle of crunchy seeds, like sunflower and pumpkin seeds, oomphs the healthy fats, antioxidants, and essential minerals; while the dukkah adds a wonderful crunch and burst of spice.
