Hummus Rice Cakes with Seeds & Dukkah

This easy vegan savoury snack idea comes together in minutes! With creamy hummus, crunchy sunflower and pumpkin seeds, and a sprinkle of aromatic dukkah, these healthy hummus rice cakes are both tasty and nutritious.

Hummus on rice cakes is a solid snack idea, and one that’s been in my rotation for years. And, if it ain’t broke, don’t fix it, right? Well, I’d like to counter myself.

As a Registered Nutritionist, I’m always looking for ways to boost the nutrition (and flavour) of what we eat. So, consider these hummus dukkah rice cakes an evolution of the classic. A sprinkle of crunchy seeds, like sunflower and pumpkin seeds, oomphs the healthy fats, antioxidants, and essential minerals; while the dukkah adds a wonderful crunch and burst of spice.

Gather Ingredients

  • Rice cakes. Opt for whole grain brown rice cakes for a bit more fibre and nutrition than white rice cakes. Find them in the snack aisle, health food or gluten-free section at your local supermarket.
  • Hummus. A creamy, Middle Eastern dip made from blended chickpeas, tahini, olive oil, lemon juice, and garlic. You can use homemade or store-bought.
  • Lemon juice. For brightness (and a boost of vitamin C!). Go for freshly squeezed.
  • Dukkah. A Middle Eastern spice blend, made from a mix of nuts, seeds, and aromatic spices.
  • Seeds. I like a mix of sunflower and pumpkin seeds.

Step-by-Step: Hummus Rice Cakes

This is one of those recipes that is so easy, it barely warrants a step-by-step.

Smear hummus onto rice cake using back of a spoon or a knife. Squeeze lemon juice overtop.
Sprinkle the sunflower seeds, pumpkin seeds and the dukkah overtop.

To Serve

This snack is best enjoyed freshly made. Once you layer overtop something moist (like hummus), the rice cake starts to loose its crispiness. Luckily you only need a minute or so to prep them!

Hummus Rice Cakes with Seeds & Dukkah

Serving Size: 1 rice cake

Ingredients:  

  • 1 rice cake
  • 1 heaped Tbsp hummus
  • A squeeze of fresh lemon
  • 1 tsp seeds, sunflower and pumpkin
  • A sprinkle of dukkah

Method:

  • Smear hummus onto rice cakes (1 heaped Tbsp hummus per rice cake) using a knife or the back of a spoon. Squeeze fresh lemon juice.
  • Sprinkle overtop the seeds and dukkah. Enjoy!
