Welcome to the August edition of Recipe Club! This month, we're baking wholesome spiced pumpkin muffins. These feature a blend of plain and almond flours for a tender and rustic crumb (and nutrition boost!). They're naturally sweetened with maple syrup, and are made extra moist with pumpkin purée and olive oil. The perfect blend of flavour and nutrition!

How to participate

  1. Make the challenge recipe and take a photo of the completed dish
  2. Email your entry to recipeclub@nourishandtempt.com with the subject line “Recipe Club Entry”
  3. Entry must include your name, where you live and the photo of the completed dish
  4. Submissions close on the last day of the month.

August’s Recipe

These Healthy Spiced Pecan Pumpkin Muffins celebrate seasonal pumpkin, feature protein-packed almond flour, and use heart-healthy olive oil instead of butter. They’re a great meal prep breakfast or wholesome on-the-go snack.

YOU’LL LEARN THROUGH MAKING THIS RECIPE:

  1. The magic of pumpkin purée in baking. Pumpkin purée isn’t just for flavour! This recipe will show you how certain veggies, like pumpkin, can replace some of the fats traditionally used in baking, like butter or oil, for moist muffins that aren’t dense.
  2. Using almond flour for texture and nutrition. Utilising almond flour alongside regular flour adds a gloriously rustic, tender crumb, while boosting the healthy fats and protein. This means muffins that are more filling and nutritious!
