With just a quick mix of ingredients and no cooking beyond toasting your bread, itโ€™s impressive enough for brunch guests, yet casual enough to make in your pyjamasโ€”no kitchen faff involved.

Step-by-Step: Smoked Salmon Toast

Finely snip the chives and chop the dill (I like using kitchen scissors for the chives).
Mash cream cheese and capers, squishing the capers with a fork.
Mix olive oil, lemon juice and zest, herbs, and a good pinch of salt and pepper into the cream cheese.
Spread cream cheese on toast. Gently layer smoked salmon overtop. Finish with a sprinkle of extra herbs.

  • Bring the cream cheese to room temperature. Mixing cold, firm cream cheese will give you an arm workout! For easy blending and the creamiest, most spreadable texture, soften first.   • Squish the capers. Give them a quick press with a fork while mixing into the cream cheeseโ€”it’ll distribute their briny, salty flavour more evenly.

Ingredients:  

Herb cream cheese spread

  • ยผ cup cream cheese, room temperature
  • 1 tsp capers
  • ยฝ Tbsp extra virgin olive oil
  • ยฝ tsp lemon juice
  • A good pinch of salt and pepper
  • 1 Tbsp finely snipped fresh chives
  • 1 Tbsp finely chopped fresh dill
  • ยฝ tsp lemon zest

Toast assembly

  • 2 slices sourdough toast
  • 100 g cold-smoked salmon
  • Extra fresh herbs, to garnish

Method:

  • In a small mixing bowl, mash the cream cheese and capers with a fork, breaking up the capers to release their flavour.
  • Mix in the olive oil, lemon juice and zest, fresh herbs, and a good pinch of salt and pepper. Taste test and adjust flavours if desired.
  • To assemble, spread the cream cheese on the toast, then gently layer the smoked salmon on top. Finish with a sprinkle of extra herbs.
