🍑Summerfruit Whipped Ricotta Tart🍒

My go-to dessert for summer! With summerfruit in season now in NZ, it’s the perfect time to give this a try. It might look a little fancy, but this one is surprisingly easy to make.

As a Nutritionist, I love fresh summer fruit🙏 Not only are they delicious—they’re packed with goodness too:

🍑 Apricots = A good source of Vitamin A
🍒 Cherries = Packed with Vitamin C
🍑 Nectarines = A source of potassium
🍑 Peaches = Another great source of Vitamin C

INGREDIENTS
Pie crust
1 ½ cup almond flour
1 cup plain or gluten-free flour
Pinch of salt
¼ cup melted unsalted butter
2 Tbsp runny honey
1 egg

Whipped Ricotta Filling
500 g soft ricotta cheese
¼ cup runny honey
Vanilla essence, to taste

Fruit Topping
Sliced summer fruit
Mint

METHOD
Preheat oven to 180°C. Grease a 23cm tart tin. Combine dry ingredients, mix in butter and honey until crumbly, then add egg to form a dough.

Press into the tin, prick with a fork, and bake for 10–11 minutes. Cool completely before removing from the tin.

Blend ricotta, honey and vanilla seeds until smooth. Spread ricotta mixture over base. Top with sliced fruit. Chill before serving.

I’m pretty careful about claiming a healthier take on a sweet treat tastes like the real deal—but these peppermint snack balls deliver SERIOUS After Dinner Mint vibes (or York Peppermint Patties for my US friends💃)!

They’re made with wholesome ingredients, are great to meal prep, and last for yonks in the freezer (though I reckon they won’t hang around that long🤤!).

Vegan friendly + gluten and dairy free.

Festive Chocolate Peppermint Bark🎄🍫

This one’s really easy to make, but looks quite fancy!💃 All the swirling will have you feeling like a chocolatier.

Simply melt a 250g block of dark chocolate, mix in a splash of peppermint essence, the pour over a lined baking tray and smooth with a spatula/spoon.

Then add dollops of white chocolate and swirl with a toothpick. Sprinkle over chopped cranberries and pistachio.

Refrigerate until hard then break into shards.

It’s finally here🥹✨

Five years ago, I approached my Baba Mladenka (grandmother) about creating an heirloom cookbook featuring her generations-old recipes.

What started as an idea for a simple ring-binder escalated into a full-blown cookbook, dotted with her stories and early food memories. And this week we picked up the printed final copies!😭

I can’t begin to describe how much joy this project has brought us. Baba loved sharing her recipes and stories, and I’ve treasured every moment of documenting them🙏.

By capturing the knowledge of those important to us, their special stories and skills live on, maybe even for generations more. My hope is that this project might inspire you to do the same💛☺️.

Christmas Wreath Summer Salad🎄🥗

Summer has officially arrived in NZ, and that means it’s salad season!

This go-to summer salad is fresh, delicious, and full of seasonal goodness. Perfect for festive entertaining when plated up Christmas vibes (like this wreath idea🎅), or meal-prepped to enjoy all week long.

Try it stuffed into wraps, as a sandwich filler, in a salad jar, or mixed with grains and your favourite protein.

🥗Here’s the recipe🥗
For the salad:
4 cups salad greens
250g cherry tomatoes
1 cucumber, sliced into rounds
1 capsicum, sliced into rounds or strips
A handful of fresh herbs (your pick)

For the dressing, whisk together:
¼ cup olive oil
2 Tbsp white wine vinegar
1 tsp Dijon mustard
1 tsp runny honey
1 garlic clove, grated
Salt and pepper, to taste

To serve, sprinkle over:
Flaked almonds
Pistachios
Cranberries
Burrata cheese

*if meal prepping for lunches, only dress the salad when you’re ready to serve to keep it nice and fresh
