My latest blog talking all things Phillipines and food is live☺️Food is always a highlight when travelling, I love experiencing culture through it. 

While two weeks is barely enough time to scratch the surface of any cuisine, let alone an archipelago with 7000+ islands, we ate some incredible food over there and so the blog wrote itself💃.

Out of office🌴🇵🇭🌊 The Phillipines has Out of office🌴🇵🇭🌊 The Phillipines has over 7000 islands (🤯) and today we visited three. Been gorging on fresh coconuts, both the water and the inside coconut meat🥥 Fun fact about coconut water: it’s naturally rich in electrolytes, which we lose through sweat during hot weather or exercise - so it’s great way to rehydrate in this weather💃☀️

Feijoa and banana crumble🍌🧈This nutritious a Feijoa and banana crumble🍌🧈This nutritious and scrummy crumble is packed with seasonal fruit; fibre-rich oats, seeds and coconut; and tossed with warming spices, vanilla, maple syrup and beautiful westgoldnz butter! Honestly the smell when it bakes…dreamy🥰.

Westgold’s premium grass-fed butter is made in New Zealand on the South Island’s West Coast. It’s my absolute go-to butter for so many reasons - one being that it tastes incredible (no doubt thanks to the love and care that goes into making it, from paddock all the way through to processing💫). 

Here’s the recipe:

Ingredients 
1.5kg whole Feijoas
2 ripe bananas, sliced into coins
2 tsp vanilla essence
2 Tbsp maple syrup 
1 cup rolled oats
½ cup shredded coconut
½ tsp ground cinnamon
¼ tsp ground ginger
¼ cup pumpkin seeds
¼ cup melted butter 

Method
Preheat the oven to 170 degrees celsius.
Slice feijoas in half, remove flesh and place in a mixing bowl. Add banana and 1 tsp vanilla. Spoon into a baking dish.
Mix together oats, coconut, seeds, cinnamon, butter and the remaining vanilla and maple syrup. Spoon over fruit.
Bake for 25 minutes, or until starting to colour golden on top. Serve with a spoon of yoghurt.

I love a rice cake, but they’re a bit bland and boring on their own. I’ve been on a kitchen quest to come up with some tasty combinations, and this is my favourite to date💃
