Spring is here, and it’s the perfect time to swi

Spring is here, and it’s the perfect time to switch up your meals with seasonal produce🌸🥔🍄‍🟫🥑.

Research shows that we tend to eat most of our veggies at dinner, so here’s a breakfast and lunch idea featuring spring vegetables.

🍄‍🟫First up is a mushroom scramble on toast. Mushrooms are not just delicious and versatile, they’re also super nutritious and packed with B vitamins, like Niacin and Riboflavin.

🥑🥔For lunch, I love this simple spring salad. It’s made with seasonal Perlas potatoes, creamy avocado, and creamy avocado. Avocados bring a boost of heart-healthy fats, Vitamin B6 and Folate, while potatoes offer a good dose of Vitamin C.

Remember, buying in-season veggies gives you the best flavour and value. So, make the most of what spring has to offer and enjoy these versatile ingredients beyond just dinner!

As a taste judge, I focus on an entries sensory aspects, like how it tastes, its texture, aroma and appearance.

Fun fact: the NFZA judging panel actually features a cross-section of the NZ food and beverage industry, with eight different specialities, including technical and business judges, through to packaging and sustainably experts! It’s robust to say the least🙏.

Oh man, guys🥹. I received some pretty big news this morning - Nourish and Tempt has been announced as a finalist in 2024 @iacppix Awards (Digital Media - Food Blog)!🤯🎉

An IACP (International Association of Culinary Professionals) Award is one of the most prestigious honours in the culinary media world. To be a finalist…it’s a dream and I can’t quite believe it!🙏

Hanging out on my website, writing about food, is a happy space for me. It’s where I feel most in a state of flow, and it brings me pure joy to craft recipes and share nutrition information in this way❤️.

Winter fruit pancakes🍋🍊🥝 These have citrus zest in the batter, and are pan-fried with slices of fruit, so they’re jam-packed with fruit flavour!

Adding a piece of seasonal fruit or two to your breakfast each morning is an easy way to boost your daily nutrient intake and support your wellbeing this winter.

Ingredients
Pancake batter:
1 egg
¾ cup milk of choice
2 Tbsp runny honey
1 tsp vanilla essence
1 cup flour (plain or gf)
2 tsp baking powder
¼ tsp salt
1 tsp navel orange zest
1 tsp lemon zest
To garnish:
Sliced green and gold kiwifruit
Sliced tamarillo (i stewed mine with honey first)

Method

Whisk together the egg, milk, honey and vanilla until smooth. Whisk in the flour, baking powder and salt. Don’t worry if it’s lumpy - lumps are good in pancake batter! Fold through the zest.

Thinly slice your fruit of choice (I did kiwifruit and stewed tamarillo). Heat a medium fry pan and grease with oil or butter over a medium heat. When hot, dollop tablespoons of the batter onto the fry-pan. Add a piece of sliced fruit overtop of each dollop. After a few minutes, flip over and cook on the other side.
