Papaya Breakfast Boats

Ingredients:  

  • 1 papaya
  • 1 juicy lime
  • ¼  cup your favourite muesli or granola
  • 2 Tbsp plain unsweetened plain yoghurt or coconut yoghurt
  • Sliced fresh fruit of choice e.g. strawberries, raspberries, banana...
  • Optional garnishes: nuts, seeds, edible flowers or coconut chips to sprinkle on top

Method:

  • Cut papaya in half length ways. Carefully scoop out the inner black seeds with a spoon and discard.
  • Squeeze lime juice over papaya.
  • Fill the hole with the muesli or granola and then top with yoghurt and fresh fruit.
  • Decorate (optional) with extra nuts, seeds, edible flowers or coconut chips.

Notes:

Gluten-free? Use a gluten-free muesli or granola.
Vegan or dairy-free? Use coconut yoghurt.
Nut-free? Check your muesli or granola is nut-free, and don’t garnish with extra nuts.
