Mash avocado with a fork. A few chunks here and there are AOK.
Spoon (or fork) the mashed avocado onto the rice cakes and smear across nice and evenly. Per rice cake you're aiming for ¼ avocado.
Spoon the kimchi overtop the mashed avocado. To max out the flavour, drizzle over a little kimchi juice from the jar. Per rice cake you're aiming for 2 tsp kimchi.
Garnish with a sprinkle of sesame seeds.
