Lemony Apricot and Coconut Bliss Balls

Lemon and apricot bliss on a plate..

Ingredients:  

  • 1 cup dried apricots
  • 1 cup raw cashew nuts
  • 1 cup shredded coconut
  • 1 pinch of salt
  • 1 ½ Tbsp runny honey
  • ½ tsp vanilla essence or extract
  • 1 ½ tsp lemon zest from a small lemon
  • 1 Tbsp water

Method:

  • Put the apricots, cashews, coconut and salt into a food processor. Blitz until crumbly. Don't over process as otherwise they'll release their oils and get oily on the outside (this isn't a problem taste wise, and when in he fridge this will go way - it's just annoying when rolling!).
  • Put the honey, vanilla and lemon zest. Blitz until the mix is looking tacky (like it's just starting to hold together). Add 1 Tbsp of water and blitz for a final 30 seconds. It should be tacky and hold together when squeezed.
  • Using a tablespoon as a measure, roll tablespoons of the mixture into balls. Enjoy!
