Jammy Egg, Avocado & Pesto Toast

Sourdough bread topped with avocado, boiled egg and pesto.

Ingredients:  

Per toast

  • 1 slice of bread
  • 1 egg
  • ¼ ripe avocado
  • 1 tsp pesto
  • Salt and pepper, to taste

Method:

  • Bring a large saucepan of water to a boil over medium-high heat.
  • Using a slotted spoon, lower the eggs carefully into water one at a time.
  • Cook for 7 minutes, adjusting the heat to maintain a gentle boil.
  • While eggs are cooking, put bread slice onto toast.
  • Once toasted, spread with avocado.
  • Remove egg and transfer to a bowl of ice water (water + a few ice cubes does the trick!) and chill for around 2 minutes.
  • Peels egg. Slice into quarters. Top toast. Season well with salt and pepper.
  • Drizzle with pesto. Enjoy!
