Peel banana, and discard skin. Using a small sharp knife, run the knife in a slow, sweeping motion horizontally through the banana to cut into two pieces lengthways.
Dollop the peanut butter onto each banana half (1 tsp per half), and use a spoon to smear evenly across the top.
Sprinkle generously with shredded coconut (½ Tbsp per half).
Drizzle lightly with runny honey (¼ tsp per half).
