ad / Vanilla-berry Greek overnight oats🍶🫐 I ad / Vanilla-berry Greek overnight oats🍶🫐 I have another easy yoghurt recipe for you guys! Packed with dietary fibre (17g/serve!), this overnight oat recipe is great to make before bed to take to work or university on-the-go the next day. 
 
It’s prepared using the @thecollectivenz new Greek plant yoghurt that’s made right here in NZ. Formulated to be higher in protein to mimic classic Greek yoghurt, this super thick ‘n’ creamy clever yoghurt offers 5.1g protein per serve and is a source of probiotics (aka good bugs that support digestive wellbeing!). An awesome pick if you’re unable to consume dairy products or follow a dietary preference where dairy is excluded (e.g. veganism). 
 
Here’s the recipe -  
Ingredients 
⅓ cup oats 
⅔ cup milk, your choice 
1 Tbsp chia seeds 
1 Tbsp linseeds 
1 Tbsp shredded coconut 
1 handful of fresh/frozen berries 
⅓ cup @thecollective Greek-Style Plant Yoghurt in Vanilla 
1 small apple or pear 
 
Method 
Soak overnight the oats, milk, chia, linseeds and shredded coconut. In the morning toss through 2 Tbsp greek yoghurt + 1 small grated apple or pear. ad / Mint choc chip kefir green smoothie🌱Anyone ad / Mint choc chip kefir green smoothie🌱Anyone a fan of mint choc chip ice cream?🍦 Here's a smoothie take on it, and a nice beginners 'green' smoothie (aka smoothies with added green veg!). 
 
This smoothie features @thecollectivenz gut lovin’ kefir pourable, which is smooth, a little sour, and will tickle your tongue with its natural sparkling effervescence. It's made (like traditional yoghurt) by fermenting milk with 'good' bacteria - this blend has a diverse range of 13 strains of beneficial live cultures!  
 
Good 'bugs' can make home in your gut, and may provide digestive health benefits. Interestingly, kefir is lower in lactose (the sugar found in milk), with certain bacteria pre-digesting the lactose - meaning people with lactose intolerance may tolerate and enjoy kefir without much problem (1)! 🤙
  
Ingredients🍌 
1 frozen banana 
1/4 frozen avocado 
1/2 cup @thecollectivenz kefir pourable natural 
1/3 - 1/2 cup milk, your choice (to your desired consistency) 
A handful of spinach 
A small handful of fresh mint 
A few drops food grade peppermint essence 
1-2 squares of dark chocolate  
 
Method🥣

Banana oat cookies🍌🍪 These cookies are nutri Banana oat cookies🍌🍪 These cookies are nutritious, easy-to-make, scrummy and require the simplest-of-simple ingredients list. We're talking mashed banana, rolled oats, coconut, dried fruit and chocolate - that’s it!    
   
Here’s the recipe -   
Ingredients   
4 mashed ripe bananas   
2 1/2 cups rolled oats   
1/2 cup desiccated coconut    
12 dried apricots (or sub for cranberries), diced   
1/4 cup choc chips or a handful of chopped dark chocolate squares    
   
Method   
Preheat oven to 180 degrees. Mix all ingredients together. On a lined baking tray spoon large Tbsp of the mixture into cookie shapes - I find spooning into a cookie cutter helps for perfect cookie shapes!    
   
Bake the cookies for 12-15 minutes, then remove from the oven and let cool - they’ll firm up.  
 
👧They're a great recipe to make with little ones - they'll have fun mashing the banana, counting apricots and mixing ingredients together with their hands - it'll get a bit messy, but fun🤪   
   
Time in the kitchen with kiddies is an ace learning experience and quite the unintentional classroom📚 It can help teach:   
1️⃣Basic math concepts (counting and measuring ingredients)   
📖Reading and comprehension (recipe packets or recipes)   
🧪Chemistry (ever added lemon juice to baking soda? Fun!)   
✈️Expand palates and understandings of cultures   
🌟Build self-confidence

What’s special about it is that you actually cook banana in with the oats. As the banana warms and softens, it infuses a yummy banana flavour throughout the porridge🤙  
  
Oats are an epic breakfast option - they're cheap, accessible, filling, and rich in dietary fibre and energy🙏🏻 They’re also a versatile base; with endless ways you can spruce up a classic bowlful💃  
 
Serve with a big drizzle of peanut butter, because banana + pb are an ace pairing - like PB and jelly or Nutella and banana, they’re a match made in foodie heaven🥰.
