Building a nutritious lunch box with seasonal frui Building a nutritious lunch box with seasonal fruit and vegetables🍠🍊🥕🥦

I've teamed up with @5adaynz to share a healthy and balanced lunchbox idea that champions in season fruit and vegetables in New Zealand! Here's what's on the menu:
🥦Mini kūmara and broccoli fritters 
🥕Hummus with carrot sticks
🍊Yoghurt with oranges and hemp seeds
🍚Rice crackers
🍽A few nut-free bliss balls

The fritters are really easy to make, and use simple ingredients - just grate a kumara and finely blitz a broccoli, toss with 2 eggs, 1/4 cup flour and S&P, and pan-fry spoonfuls in oil until gloriously golden! 

Buying seasonal is a great budget-friendly practice. As in season produce is easier to grow locally and more abundant, it's more affordable. It's also fresher, as it hasn't had to travel as far to our plates (and so tastes better too!)🌍

Whittaker’s asked N&T to create a plant based recipe to help celebrate the launch of their Oat Milk Chocolate, and this silken tofu chocolate mousse has become my new favourite dessert!🙏🏻 

With only three ingredients(!), this high-protein dessert is creamy, rich and totally plant-based.
