A breakfast for the jam lovers. Starring cottage cheese, this 4-ingredient breakfast toast idea is a protein-rich twist on jam on toast. It comes together in 5 minutes and is vegetarian friendly.

As a jam lover, there’s always a jar sitting pretty in my fridge. However, jam-slathered toast for breakfast doesn’t tend to leave me satisfied into the AM. Enter this 4-ingredient cottage cheese toast idea.

The topping is a breeze to make—simply mix jam into cottage cheese, dollop over toast, and finish with a scattering of berries. The end result? A delicious, nutritionally well-balanced breakfast, delivering just shy of 20g protein per serve.

As a Registered Nutritionist, I’m all about simple ways to boost the nutrient diversity of everyday meals. This protein-rich twist on jam on toast will help keep you full for longer, while also sneaking in a serving of fruit—not a bad way to start the day.

Gather Ingredients

  • Your favourite bread. Opt for a wholegrain variety for a fibre boost.
  • Cottage cheese. Choose your favourite e.g. full-fat/regular or lower fat. I love regular for its rich and creamy taste.
  • Raspberry jam. Use store-bought, homemade, low-sugar, fruit-sweetened, organic—whatever’s your pick!
  • Fresh raspberries. Delicious at seasonal best, but defrosted frozen fruit works well too in a pinch.

After a different jam and fruit combo? Swap out raspberry for another duo of choice, like blueberry, strawberry or even apricot.

Step-by-Step: Cottage Cheese Fruit Toast

Toast the bread to your desired crispness.
Mix the jam and cottage cheese together.
Dollop overtop the toast, gently spreading with the back of a spoon.
Finish with a scattering of fresh raspberries overtop.

Here are tips and tricks to help your kitchen skills grow while improving the outcome of this dish:

  • Toast trumps fresh. Its crunchiness contrasts well with the creamy topping.
  • Water be gone! While some natural separation is normal in cottage cheese, too much can make things watery. Before combing with the jam, tip off any excess water you see or gently stir to mix back in.
  • Sweeten to taste. I like a ratio of 1 tablespoon of jam (a typical serving) per half cup of cottage cheese. While the jam sweetens, sweetness is subjective – if you want to add more, you do you.

Serving & Storage

Once prepped, enjoy immediately. If you’re wanting to take it on-the-go (i.e. a speedy brekkie at work), mix the jam into the cottage cheese, and then pack the ingredients (bread, fruit and jammy cottage cheese) separately to keep fresh. Assemble right before serving.

Ingredients:  

  • 2 slices of bread
  • ½ cup cottage cheese
  • 1 Tbsp raspberry jam
  • A handful of fresh raspberries

Method:

  • Toast the bread to your desired crispness.
  • Mix the cottage cheese and jam together.
  • Divide and dollop the cottage cheese-jam mix onto the toast and gently spread across using the back of a spoon.
  • Dot the berries overtop.
