Welcome to the February edition of Recipe Club! This month, we're learning how to make a nutritious pasta sauce that celebrates vegetables. For a bit of foodie fun, this dish showcases a timeless flavour pairing - beetroot and goat's cheese.

Meet Recipe Club

Each month, I’ll handpick a recipe from Nourish & Tempt that anyone can make. The recipe will showcase a nifty culinary technique, and spotlight a nutritional aspect, to help grow your kitchen skills and understanding of nutrition.

You can make the dish for your eating pleasure alone, or enter to win the monthly competition. Check out February’s recipe and prize further below.

How to participate

  1. Make the challenge recipe and take a photo of the completed dish
  2. Email your entry to recipeclub@nourishandtempt.com with the subject line “Recipe Club Entry”
  3. Entry must include your name, where you live and the photo of the completed dish
  4. Submissions close on the last day of the month.

February’s Recipe

This Beetroot & Goat Cheese Pasta with Lemony Rocket blends roasted beets into a vibrant and flavourful pasta sauce. It’s a showstopper of a vegetarian meal!

YOU’LL LEARN THROUGH MAKING THIS RECIPE

  1. A creative way to celebrate vegetables. The texture of certain cooked veggies can make a great pasta sauce base. Using beets in this way introduces unique flavours and fun natural colours to your pasta sauce, as well as a nutritional boost with essential vitamins, minerals, fibre and antioxidants.
  2. Roasting to deepen flavour. Roasting beetroot and garlic concentrates their natural sugars through caramelisation (a process where sugars are heated). This results in a rich, earthy sweetness and a tender texture that adds depth and complexity. Simple, but a game changer technique in a dish like this!
